Sunflower Zucchini Hummus

My kiddo just loves dipping his food however most commercial pre-made dips are full of no-no ingredients I am always trying to find new fun dips that meet all of his restrictions and are school friendly. I stumbled on a recipe for hummus made with nut butter and zucchini in a cookbook I borrowed from the Toronto Public Library; I made a few changes and voila a new staple recipe in my house for a great portable dip!

Side note: If anyone in your family has many food sensitivities or allergies definitely check out this book “The Autism Cookbook” it has lots of amazing kid friendly easy recipes. 

Sunflower Zucchini Hummus

Ingredients:

  • 1/2 cup sunflower seed butter 
  • 1 small zucchini – ends chopped off and sliced in large chunks
  • 1 garlic clove
  • 2 tsp. cumin powder
  • 1 tbsp. olive oil
  • 1/2 tsp. salt
  • 2 tbsp lemon juice

Directions:

  • Combine all ingredients in blender or food processor and blend until creamy.
  • Serve with baby carrots, celery sticks, bread, chips, nachos. Use your imagination the possibilities are limitless.
